In 2014 Lorie’s son was diagnosed with Type1 diabetes. He was 15 months old. At the time Lorie knew absolutely nothing about diabetes. It was a complete shock, uncertainty, and fear that she did not think she could manage. What scared her the most was this new world she was about to enter with zero experience and knowledge.
Lorie always considered herself someone who ate healthy but definitely did not live a life of “Carb counting” “weighing” and “food scales”. This is what the doctors kept telling her was vital in managing her son’s glucose levels. she was perplexed and worried. How was she going to feed her baby? Most importantly, do it in a way that was healthy and delicious?
Lorie started to do a lot of reading, looking at labels and nutritional information. Horrified by what she was seeing, she became fed up with her options and set out to create a better solution for her family. Lorie began experimenting with wholesome ingredients to put into her son’s food.
Natural and delicious, “Besto” Pesto was created; that’s what her son called it from the first taste he had. He loved using the pesto sauce with so many different dishes; it became a staple in their home.
I believe that eating well should be easy and healthy. We should be eating wholesome, delicious foods without the added junk.
