Pesto Chicken Calzone
Ingredients:
2 x 250g packets fresh pizza dough
1 tablespoon extra-virgin olive oil
400g / 0.8lb chicken mince
1/3 cup Besto pesto
1/3 cup drained semi-dried tomatoes, chopped.
1 red onion thinly sliced.
1 cup grated pizza cheese.
Preparation:
Preheat the oven to 400 F. Use parchment paper on your pan.
In a frying pan heat oil and onion over medium-high heat, cook for 2 minutes or until the onion become soft. Add the chicken mince, cook for 5 minutes. Add Besto pesto and dried tomato. Cook and stir for 2-3 minutes.
Divide the pizza dough into 4 equal portions. Roll 1 portion into a 7–8 inch round.
Put a layer 1/4 of the cheese and 1/4 of the chicken mixture on one half of the round. Fold over the dough and roll and pinch edge together to enclose. Repeat the process with the remaining dough, chicken mince and cheese. Place on the prepared tray. Brush the dough tops with an egg (optional). Season with salt and pepper. Bake for 15-18 minutes or until dough is golden and the filling is cooked.
